Ingredients
  

  • 4 cod fillets
  • 1 onion diced
  • 2 cloves garlic grated
  • 135 g cherry peppers stuffed with ricotta
  • 2 tins tomatoes
  • Parsley to finish

Instructions
 

  • Place 1tbsp of oil into a high sided frying pan over medium heat, sweat onions for 3-4 minutes, add garlic and reduce heat
  • Add tinned tomatoes, allow to simmer then gently place the cod fillets and stuffed cherry peppers into the sauce, ensuring they’re covered
  • Cover with a lid or foil and allow to gently cook for 10-15minutes
