Freekeh with Pomegranate & Herbs

green wheat, roasted & sundried with sweet molasses & herbs

Servings 4 as a side

Ingredients
  

  • 200g green wheat freekeh
  • 4 spring onions, finely sliced
  • 125g pomegranate seeds
  • 15g flat leaf parsley, roughly chopped
  • 15g mint, leaves roughly chopped
  • 4tbsp extra virgin olive oil
  • 2tbsp pomegranate molasses

Instructions
 

  • Cook freekeh as per packet instructions, allow to cool
  • To make the dressing whisk together the extra virgin olive oil and pomegranate molasses, season with salt
  • In a large bowl gently mix together the freekeh, spring onions, pomegranate seeds, herbs and dressing. Taste, season and serve
