Freekeh with Pomegranate & Herbs

Ingredients Method

Ingredients
  

  • 200g green wheat freekeh
  • 4 spring onions, finely sliced
  • 125g pomegranate seeds
  • 15g flat leaf parsley, roughly chopped
  • 15g mint, leaves roughly chopped
  • 4tbsp extra virgin olive oil
  • 2tbsp pomegranate molasses

Method
 

  1. Cook freekeh as per packet instructions, allow to cool
  2. To make the dressing whisk together the extra virgin olive oil and pomegranate molasses, season with salt
  3. In a large bowl gently mix together the freekeh, spring onions, pomegranate seeds, herbs and dressing. Taste, season and serve
