A quick weeknight dinner that combines sweet flavours, meaty fish and a crowd pleasing tomato sauce, great served with bulgar wheat or cous cous and greens.
Ingredients
- 4 cod fillets
- 1 onion diced
- 2 cloves garlic grated
- 135 g cherry peppers stuffed with ricotta
- 2 tins tomatoes
- Parsley to finish
Instructions
- Place 1tbsp of oil into a high sided frying pan over medium heat, sweat onions for 3-4 minutes, add garlic and reduce heat
- Add tinned tomatoes, allow to simmer then gently place the cod fillets and stuffed cherry peppers into the sauce, ensuring they’re covered
- Cover with a lid or foil and allow to gently cook for 10-15minutes
