Ingredients
  

  • 4 cod fillets
  • 1 onion diced
  • 2 cloves garlic grated
  • 135 g cherry peppers stuffed with ricotta
  • 2 tins tomatoes
  • Parsley to finish

Method
 

  1. Place 1tbsp of oil into a high sided frying pan over medium heat, sweat onions for 3-4 minutes, add garlic and reduce heat
  2. Add tinned tomatoes, allow to simmer then gently place the cod fillets and stuffed cherry peppers into the sauce, ensuring they’re covered
  3. Cover with a lid or foil and allow to gently cook for 10-15minutes
